Origen Raíz is made possible by the partnership of two sons that brought their families together.
Bildo Saravia comes from a family of Durgango with a long history of work in improving the local economy through business. Mezcal was always in his heart and as his life brought him to Sydney and back to Durango, he found that his family's sizable cattle ranch had a lot to offer. A lot of wild cenizo. Though Bildo loved mezcal, he did not have the knowledge to produce mezcal. And so hence...
Asis Cortés from the Cortés family of Oaxaca brings the knowledge of mezcal production from six generations. He brought his father and Master Mezcalero Valentine, and fellow Master Mezcalero Rolando (Asis’ uncle) to Durango. A survey of the land found about 1 million kilos of cenizo plants, more than can ever be all used. The project is also working on sotol production and the use of other wild agaves in Durango.
